"Provolone Del Pollo" (Chicken
Provolone) Ingredients:
6-8 Chicken breasts boneless, skinless
1-26 oz. Jar Blessetti's Vegetable Medley Sauce
1 Cup Unseasoned Breadcrumbs (optional)
6-8 Provolone cheese slices
Extra virgin olive oil
salt & Pepper to taste
Directions:
Brush Olive Oil on Chicken Breasts. Coat in Breadcrumbs.
Bake for 15 mins at 350 degrees, uncovered.
Ladle Blessetti's Vegetable Medley Sauce over entire chicken. Bake at
350 degrees for an additional 35 minutes. When chicken is cooked, cover
with provolone cheese, and serve!
Delicious served with ice crispy green salad and Italian garlic toast!
"Eggplant Italiano"
Ingredients:
1-med Eggplant
1-26 oz. Jar Blessetti's Savory Roast Beef Sauce
Extra virgin olive oil
2 cups shredded mozzarella cheese
salt & pepper to taste
Directions:
Wash eggplant, cut into whole slices, discarding end stem. Lightly stir
fry eggplant slices in olive oil, until lightly browned. Simmer in
Blessetti's Savory Roast Beef Sauce, uncovered for 15 mins. over low to
medium heat.
Cover in shredded mozzarella cheese, serve hot.
